Visited their on a Thursday night in July with me, my wife, and 19-year-old daughter. Unfortunately, we were not overly impressed with their food. Some aspects were really good while others were not. Full disclosure, we're from Northern New Jersey outside of New York City and have access to an awesome amount of high quality Italian food. I can see how other reviewers admire Impostos attempt at higher and Italian food recipes, but for us they fell short. (My daughter made a joke that they should change their name to "Imposters"). They're focaccia bread is not like the typical forgot you a bread in that it had a white bread texture. The flavor profile was good, but did not have the chew of a traditional focaccia bread. The Caesar salad was very good with a dressing that was obviously made on the premise. It had good creaminess and flavor including a good amount of anchovy taste. Seafood proteins in our dishes were good, however the sauces were not up to par from our own experience. The sauce that was the worst for us was the Alfredo sauce. Already like a well oiled Italian machine that's been around for decades. The owners/managers are truly masters at their craft and know how to foster a tremendous dining experience. You NEED to start off with the rosemary focaccia and the meatball appetizer. Both were cooked perfectly and the house Marinara is some of the best I've ever had. If I could buy a pallet of that Marinara sauce, you best believe I would. Dip that focaccia in there if you know what's good for you. I absolutely loved my Penne Alla Vodka and my wife's Swordfish. My only regret is not getting a Goat Cheese Flatbread to-go for some next-day lunch since it looked absolutely fire at the table next to ours. Everything was beautifully presented and tasted amazing! We also thoroughly enjoyed our cocktails - Impasto Hugo and a delicious margarita with Milagros tequila and a kick of jalapeƱo and cilantro. Our server, Simon, was personable and knowledgeable- an instant favorite! We will always ask to be seated at one of his tables! He knew the food well, offering great descriptions and recommendations, but also was a cocktail aficionado/mixologist. We so enjoyed chatting with him about the intricacies of the libations and his prep techniques.
