Returned to Ernesto’s for a second visit, and wow — their seasonal spring menu is a knockout. While my first trip was pleasant, this time I was truly blown away by every dish. Soft, melt-in-your-mouth texture with a thin, lightly crisped casing. No off-putting flavors, just balanced spice and savory goodness. Paired with sweet charred peppers — I could’ve eaten ten servings! šŸ„ Madrid-Style Tripe – Reminded me of the cozy, hearty stews from my favorite spot, Beba. Generous chunks of tripe stewed until tender yet springy, in a deeply savory broth with beans and smoky cured meat.
