Denver’s dining scene has been thriving lately — with plenty of new Chinese spots and three MICHELIN-starred additions this year. The most exciting news? The Wolf's Tailor just became Colorado’s very first two-star restaurant! ⭐️ I booked as soon as the list dropped — just before the price hike. 📜 The Menu & Philosophy Inspired by circularity — the symbol on the menu reflects a commitment to reusing ingredients fully and thoughtfully. 🟣 Amuse-Bouche Trio Left: Trout mousse with shiso + sweet fish sauce — light but not mind-blowing. Middle: Panna cotta with salmon roe — one spoonful and BAM! Umami explosion 💥 Silky, savory, sweet, with bursts of roe. That charred kombu oil was the secret star 🌊 Right: Corn macaron with sturgeon caviar — ate it whole, tasted more sweet and corny than fishy. Flaky, delicate, not too sweet. 🐟 Trush Ceviche A dish that looks like art — tiny trout slices in miso-carrot broth, lime, vinegar, wagyu-fat-fried jalapeño oil, peanuts, sesame, flowers, lemongrass gel… A science experiment in a bowl 🧪🌸 Taste: floral → tangy → umami slowly unfolding. 🍅 Heirloom Tomato & Watermelon Looks like a flower garden 🌸 Flavors? A rainbow: sour tomato + sweet watermelon + savory fish sauce + spicy jalapeño oil + bitter notes from baby watermelons. Brilliant and balanced. 🌽 Sweet Corn Agnolotti Not your average pasta! Yellow wrappers hold rich corn purée — broth tastes like tom yum (ginger, cream, tomato) 🍄 Hidden treasures: corn kernels and tender matsutake mushrooms. 🍞 Bread Course Warm bread with rich mole sauce — but the real winner: pumpkin miso butter 🧈 Savory, smooth, unforgettable. 🥩 Main: Wild Beef Striploin Perfectly cooked — thin crust, rosy pink inside (cold-sear method?). Juicy, smoky, deeply flavorful. Side: crispy radish chips (a bit too bitter for me). 🍧 Dessert & Mignardises Plum Sorbet + White Chocolate: Sharp sweet-sour contrast. Sorbet felt out of place against the warm base. Peach Jelly: Tart, hawthorn-like, refreshing. Chocolate Structure: Cocoa pod with a branded chocolate beam — more art than food. Closing with buckwheat tea — clean, aromatic finish. 💵 Total: $232 (incl. tax & service) 💭 Verdict: Stunning flavors, artistic plating, and brilliant fusion of Italian, French, Japanese, Vietnamese, Mexican, and American influences.
