Procrastination struck – only because I had Japanese food yesterday did I remember the amazing Uchi I tried in Denver two weeks ago! In short: their sashimi is super fresh and delicious – a must-order! Sushi was just okay though – they really try to be creative (like the fried salmon mayo sushi), but it didn’t hit for me. The fried meat sushi was also a letdown – dry and tough. I ate one piece and let my husband finish the rest 😅 But the Mushroom Rice was a standout! With Wagyu sauce, every bite was packed with earthy mushroom flavor and rich beef aroma – loved it.
