A Mixed Experience with Vegetarian Options🍜🌱

From a whispered New York legend in my brother-in-law's stories to an ubiquitous empire spanning cities and even my grocery freezer (thanks to Milk Bar's delicious ice cream), the name Momofuku has long held a certain magic. So I was thrilled to snag a reservation at their Vegas location inside The Lido at The Palazzo! I went solo before a concert (which, sadly, got cancelled — let’s not dwell on that 😅) and chose a seat at the chef’s counter, where I could watch the kitchen team in action. (Heads up: if you enjoy seeing meat being prepared, the chef’s counter is your spot! 👨🍳🥩) As a vegetarian, I was happy to see a few different options on the dinner menu. I went for the Green Curry Rice Cakes. The overall flavor was delicious and the portion was satisfying, though the rice cakes themselves had a slightly rubbery texture. Part of me wished I’d ordered the noodles instead — after all, noodles are more of a Momofuku signature, and it might have given my taste buds a truer sense of their craft. But since I’d already enjoyed a big noodle meal a few days earlier, I didn’t want to overdo it 🍝🤷‍♀️. My server was wonderful — attentive, kind, and thoughtful. And the “show” at the chef’s counter was genuinely fun to watch! I’d definitely go back to try some of their other vegetarian dishes (noodles, I’m looking at you 👀).
