Amsterdam | DE KAS Greenhouse Garden to Organic Plates 🌿🍽️
I managed to book a weekday lunch three days in advance, and the transportation was convenient. Get off at the 19th tram stop, walk through the park, and you'll arrive at this slightly suburban greenhouse in the city. Even the surrounding paths have local residents walking their dogs, which is very gezellig. 🍲 Menu Options: The price is 45€ for a 3-course (3gang) or 54€ for a 4-course (4gang) meal. The difference between 3 and 4 courses is the dessert, which you can decide on after the main course. There's no fixed menu; it changes with the seasons. 🧈 Couvert: Tapioca/celery puree Organic sourdough bread/butter 🥕 Snack: Baby carrots/mustard pickled sauce/poppy seeds Red cabbage sesame Vietnamese rice paper rolls Roasted baby kale with mint soy sauce 🥬 Appetizer: Yellow beetroot/endive/burrata/olives/pistachios/bergamot I originally didn't like the taste of bergamot, but this dish was so well-matched, along with my favorite but rarely eaten salad greens, matched with olives and pistachios to add texture. 🧅 First Course: Caramelized onions/coral fungi/fried green garlic/onion broth The onion broth is poured after serving, and the presentation looks like a fresh little pond, but the taste is so fresh with mushrooms that it's almost overwhelming, and the fried garlic in the middle adds another layer of texture. 🐟 Second Course: Cod/masala/seafood broth foam/stem broccoli/kale It calls back to the ingredients in the snack, and the cod is poached, very tender but not falling apart, with vegetables cooked to tenderness without losing their color. The sauce itself is made from a thick broth but whipped into a foam, making it light and airy, like drinking a cappuccino. 🍮 Dessert: Mixed berry sorbet I had an event in the evening, so I skipped dessert. I visited the greenhouse and saw the cultivation of the vegetables I ate, which was amazing. This place used to be a greenhouse for growing various fruits and vegetables, and to serve them at their freshest, a kitchen was opened next to it.
