🌟 Astrance: A Restaurant Reborn ✨

This can truly be considered a restaurant that has risen from the ashes. Astrance was my first three-Michelin-star experience in Paris, and at the time, I wasn’t very impressed—just remembered there was a lot of lemongrass. After losing its stars and closing down, it has now reopened, and I initially came just to reminisce about my lost youth, but I was met with many delightful surprises! 🎉 The dishes have changed dramatically from before; the classic items seem to have disappeared. The ingredients have shifted from Southeast Asian elements to Japanese influences, making the cuisine more simplified and modern. I chatted with the chef, who mentioned that the old kitchen was too small to execute many ideas, and now with a larger kitchen, he’s much happier! 🍽️✨ For the appetizers, I was thrilled to find sashimi made from the rare John Dory! The Lobster with aromatic dashi broth was exceptional—fresh and natural. The Koshinikari rice with lobster bisque resembled a risotto version of a rice dish. The Mackerel with leeks cooked in dashi and soy sauce beurre blanc was delightful, and the Vegetable tart showed that the chef is embracing the trend of incorporating more vegetables and fruits! 🦞🥒 For the main courses, we chose two: Veal with brown butter and chives 🌱 Cochon, leg and belly with charcoaled cabbage 🥓 Both dishes were outstanding, especially the pork! The texture was so tender that I could hardly believe it was pork, and there was absolutely no hint of the usual porky smell. I’m so happy to see a talented chef reinvent himself. While Michelin may not award him three stars for this menu, it’s definitely tastier than what he served during his three-star period and absolutely worth a return visit! 🌈❤️ #FoodDiary #MichelinRestaurantExploration #FrenchCuisine #ParisFood
