Atlanta | Come to Dallas!
šAs a Dallas native, every time I visit Atlanta, I feel like Iām heading to Houstonāthere are just so many more Asian food options here compared to Dallas. In recent years, Dallas has seen skyrocketing prices, an influx of big and small companies, and a variety of sports teams. Itās truly a city that can handle both business and sports, but itās never had that one standout dining experience. A few years ago, there was a decent place, but it eventually faded into obscurity.š” šEvery time I visit Atlanta, I discover new restaurants that make me go "wow." This time, I found a place called "Jiaodian" that serves cold marinated beef tripe and cold marinated pig kidneys. š” šPreparing beef tripe is already quite a hassle, and cold marinated pig kidneys are rarely seen even in domestic restaurants. Itās a dish thatās both troublesome and not very popular; if not done well, it can taste either gamey or rubbery. š” šMany restaurants, aiming for stability, use strong seasonings to mask the gamey flavor. To my surprise, Jiaodian didnāt do that. Instead, their seasoning is quite "light," with a proper "lychee flavor" profileāmildly spicy but with a hint of sweetness. There is a slight gamey taste, but itās within an acceptable range. I think the chef could easily cover it with a bit more spice.
