BRUTØ in Denver 👏 Applauding Sustainability, Returning for the Bread
In 2020, Michelin introduced the Green Star to recognize “pioneers in sustainable gastronomy.” Denver’s BRUTØ holds both a Green Star and one Michelin star 🌱⭐, championing local Colorado ingredients, zero-waste cooking, and house-made ferments. While I truly respect their philosophy, the flavor…well, let’s just say it didn’t win me over. 😅 To fully experience their in-house beverages, we ordered one alcoholic and one non-alcoholic pairing. Taste- and texture-wise, the drinks in each course were similar, but they didn’t really elevate or complement the food—no spark at all. 🥂➡️😐 The most memorable dish was the Jerusalem artichoke “three ways” 🪴—presented like a little potted plant, with different textures from varied cooking methods. It was creative and playful with an uncommon ingredient! Another standout was ice cream made from white asparagus peels—unusual yet surprisingly true to the original flavor. One spoonful and you taste pure white asparagus! 🍦 But the real star of the meal? The bread. 🍞 Soft and fluffy inside, with a charred, crispy crust dusted with aromatic spice powder—it instantly took me back to Chinese grilled flatbread! 🇨🇳🔥 The pickled mango served alongside, though…let’s just say it was all salt and sour, no depth. 😬 Our server noticed how much I loved the bread and enthusiastically suggested: “You can take a loaf home for just $14!” 😂 Honestly, if I hadn’t been such a carb enthusiast and devoured most of the bread—plus had a big beer earlier at Westbound & West in Dairy Block 🍻—I might have left their 11-course tasting menu still feeling pretty hungry. 🍽️😅 Denver is fun though—I’ll be back!
