Nestled in the quaint town of Canmore, near Banff, for those looking to ski at the Banff SkiBig3 resorts (Banff Sunshine, Lake Louise Ski Resort & Mt. Norquay), I highly recommend Canmore's ankor restaurant. This restaurant offers a French-style dining experience with exquisite dishes that I personally feel meet Michelin standards. The dining environment is fantastic, with no disappointing dishes, and many items are truly astonishing. However, it's necessary to make a reservation in advance. We visited twice. The first time, we tried the regular menu, and among the three of us, we ordered four main dishes + two appetizers + one dessert, which was just the right amount to satisfy our hunger. The main dishes were all incredibly tasty! I particularly recommend the seafood and duck, with their extremely tender and smooth meat. We also had bison and pork, which were quite good. The four side dishes and sauces were layered with depth and perfectly matched. For appetizers, we had foie gras served with brioche bread and apple jam. I recommend creating your own sauce by mixing the foie gras with apple jam and spreading it on the bread. The rich buttery flavor combined with the smooth texture creates an instant burst of happiness. Another appetizer was a squash soup topped with crab meat and cranberry gel, which was tangy and sweet, very appetizing. For dessert, we ordered a pound cake with coffee cream. The coffee cream was amazing, disappearing in no time. It's great with the cake, but even on its own, it's not too sweet or rich, with a strong coffee flavor! Highly recommended!
