Copenhagen || Dining at the Original Site of the World-Famous Noma
★ I was fortunate enough to have the chance to step into the original location of the world’s number one restaurant, Noma, and experience the taste of traditional Nordic cuisine 🍴 ★ After Noma moved to its new location in 2017, Barr restaurant officially took over the space. Barr is a collaboration between Thorsten Schmidt and Noma’s founder René Redzepi, focusing on Scandinavian flavors as well as Austrian and German cuisines. It’s been recognized by Michelin with The Plate Michelin 🌟 This time, I not only tasted what diners call the world’s best Wiener schnitzel (schnitzel wiener art), but also the best raspberry tiramisu I’ve ever had. I’m still savoring the memory of it!!! Here are some dishes that left a deep impression 🧾 ⦿ Beef Tartare 🫓 Beef Tartare is a common dish in New Nordic cuisine, but what sets Barr’s version apart is the clever use of a special fermented rye flour to make a crispy cracker with a unique sour taste from the fermentation. This sourness perfectly balances the rich flavor of the beef, creating a truly innovative dish. The cracker is crispy, and the beef is tender and soft, with a wonderful layering of flavors that I absolutely love! ⦿ schnitzel wiener art 🥩 My set menu didn’t include the Wiener schnitzel, so I ordered it as an additional dish from another menu. From the moment it was served until I finished the last bite, the schnitzel’s crust was thin and maintained its crispness. The pork was tender and juicy, with a buttery aroma complemented by pickles to cut through the richness, enhancing the overall flavor profile. ⦿ Raspberry Tiramisu 🥧 The classic tiramisu had a light and airy cream texture, paired with rich and smooth chocolate, and the slight tartness of raspberries. The dessert was sweet without being cloying. The raspberry sauce’s sweet and sour notes balanced the chocolate’s depth, adding a hint of fruitiness and refreshment. It’s truly the best tiramisu I’ve ever had, hands down! Although Barr is located in Noma’s original site, its style is completely different from Noma’s. Noma’s New Nordic cuisine is avant-garde and modern, while Barr, influenced by Noma but belonging to the next generation, continues the tradition of Nordic cuisine and creates a warm and welcoming atmosphere. The entire dining experience lasted 2 and a half hours. Sitting by the kitchen window, I had the privilege of watching the chef prepare my meal and then serve it personally to me, which was an incredible experience.
