Denver｜Carnivore's Delight! Bison Shank After a Ski Day 🍖⛷️

We ordered the Bison Shank—a massive, slow-braised bison leg bone with a full 2 pounds of meat! 🦬 The server kept trying to talk us out of it, convinced we couldn’t finish it between the two of us. Later, when we were almost done, we even called over another server to witness the (almost) clean plate! 😂 And yes, it was huge! We’d been skiing all day with no food, holding out just for this shank, and even then we barely finished it. But it was SO worth it—the meat was fall-apart tender, and the tendons near the bone were melt-in-your-mouth incredible. So impressive for bison! They actually have several bison steak options, so if you're not in a ravenous, post-ski frenzy, you might not need to go for the giant shank.
