Award-winning chef, excellent food. Try to reserve ahead! I sat at the bar solo watching the chefs prep sushi — super relaxing. Hama Chili — great starter, yellowtail in ponzu sauce is refreshing. Pork Belly — life-changing, MUST ORDER! Perfectly cooked, melts in your mouth, not greasy at all. Maple sweetness balanced, goat cheese adds depth. I’d fly back to Denver just for this 😭 Walu Walu — decent but not a standout; fish was seasoned well but not as tender as I hoped. Sake Nigiri — fresh salmon, small but great happy hour value. Sake Maki — simple salmon roll done well. Seared Scallop Nigiri — sweet and well-seasoned. They also have a 2-person omakase for $120 during happy hour — trying that next time! Colleagues highly recommend their desserts too 🍰 【Aloy Modern Thai】⭐️⭐️⭐️⭐️ A Michelin Bib Gourmand-listed (American-style) Thai spot — tasty, not overly fusion. Google says $20–30 per person, but I spent $50 solo 😅 10% off for online takeout orders, plus happy hour deals. Green Papaya Salad — authentic and refreshing, papaya super crisp, peanuts crunchy (my jaw got a workout 😂). Choose spice level 1–5 — level 3 was perfect for mild spice lovers. Bison Kao Soi — gotta try bison in Colorado! Curry slightly sweet, strong coconut flavor, huge portions of meat and noodles. Bison was tender but lean — missed a bit of the richness you get with beef brisket. Spice level 3 was good; 4 would also work. Thai Tea with Coconut Milk — fragrant but a bit sweet — wish you could adjust sweetness.
