Chasing the Denver Restaurant Week hype, I found this under-the-radar spot with dry-aged bluefin & salmon — a solid 5⭐ recommendation! 🔸 Appetizer: DRY AGED BLUEFIN TUNA SASHIMI / ORA KING SALMON SASHIMI Dry-aged tuna and salmon were absolutely incredible — but sadly, only three tiny pieces 😭 🔹 Main Course: MINI CHAMPION FILET BITES & SEARED BLUEFIN TUNA STEAK The steak (cooked medium) is award-winning — so tender and flavorful!
