Eating My Way Through Denver #28 // One Michelin Star🌟 BRUTØ

🌮 Name: BRUTØ 🌮 Location: 1801 Blake St, Denver, CO 80202 (inside Free Market) 🌮 Experience: Denver finally has Michelin stars! ⭐ Of the three starred spots in the city, this was the only one I hadn’t tried, so I visited over the holiday. It features creative Latin-inspired cuisine. The restaurant has an open kitchen with no traditional stovetops—only a pizza oven for heating. There are about ten seats in total, creating an intimate setting. No à la carte options—it’s an omakase tasting menu only. You can choose between wine or mixed beverage pairings. For premium ingredients, you can upgrade to a premium omakase or add courses with caviar/truffle. 📜 The menu from my visit is included below. We tried two different drink pairings for comparison. It started with a complimentary welcome drink. 🥂 Course 1: Freshly flown-in scallops with shredded vegetables—tangy and refreshing. The paired cocktail was decent, though I had no idea it would end up being my favorite drink of the entire meal! 😅 Course 2: Bison taco with ghost pepper sauce. The bison had a texture like soy “chicken”…not very meaty. The ghost pepper sauce was addictive though—adjust to your own heat level! 🌶️ The second paired drink was a cider from Haykin Family Cider (Aurora). While it’s used in other restaurants, this one had a…distinctly funky socks aroma! 🧦😖 Course 3: CARBS, MY LOVE! Freshly baked, fragrant bread 🍞—you can ask for more! If you don’t, you might leave hungry like I did… Course 4: Mushroom taco. By this point, I was getting a bit annoyed. Each course is already small and light, and now a veggie taco? The cheese whip on top was oddly sticky too. 🧀😒 Course 5: Main course—roasted quail with curry sauce and miso-flavored cabbage. The quail was well-cooked and the sauces were tasty, but half a quail is just not enough… 🍗 Course 6: Banana leaf-steamed cake + sweet potato ice cream. The cake itself wasn’t sweet—add sweetness with the cream on top. The ice cream was pleasantly mild. 🍰🍠 🌮 Summary: As a restaurant highlighting South American flavors, it fell a bit short of my expectations. I missed that wild, vibrant energy of Latin American cuisine. Overall, portions were small, many dishes were served cold, and it just didn’t feel satisfying. The wine pairing was all white wines, none of which I loved. Cocktails were just okay.
