Finally back at Beba! Their specialty is using a variety of fresh and unique ingredients, and their menu changes quickly. Last time I visited, I missed out on so many dishes I wanted to try, but the new menu has everything I was craving, so of course, I had to go all in! 🐰 The roasted rabbit is half a rabbit, super tender and juicy with a slightly charred exterior. Some parts are even infused with smoky, cured meat flavor. The biggest surprise was the rabbit kidneys and liver! The kidneys are tender and bouncy, while the liver is soft and delicate. 🐂 The beef brisket is incredibly thick and hearty with a crispy outer layer and tender, non-greasy interior. The accompanying clams are large and meaty with a fresh taste. 🍄 The matsutake mushrooms with pancetta on tagliatelle are a combination of all my favorite elements! The matsutake’s fresh aroma blends into the sauce, coating every piece of fresh pasta—every bite is a knockout. 🥹 The addition of pancetta’s salty, meaty flavor combined with the slightly firm, chewy tagliatelle is just perfect! 🐮 The veal belly with tomato sauce tastes like a rich, stewed tomato beef brisket. I usually dislike tomato sauces because they can be overly sweet or sour, but this sauce was so good that I scraped the plate clean. The veal belly was extremely tender with no unpleasant gamey taste. 🧀️ The Basque cheesecake was decent, though not as smooth as I'd hoped and a bit on the dry side. 🥃 The cocktails, chosen blindly, were excellent—rich in flavor with clear layers but still balanced. The wine selection was also bold and aromatic. Overall, it was an incredibly filling yet blissful meal!
