Since foie gras isn’t allowed to be sold in the U.S., the duck liver here is almost indistinguishable and even more delicate! 🍖 Sea Urchin Custard 🎉The custard is steamed a bit firmer, then mashed with pine nuts and other nut crumbs, topped with generous chunks of fresh sea urchin. The sea urchin itself is fantastic, but the overall integration is average. The seasoning is simple—savory but not surprising. If you just want to satisfy your craving for sea urchin, this is a good choice. 🍣 Sea Bass with Squid Ink Risotto The presentation is really cool: black squid ink risotto paired with a green sauce, creating a strong visual impact. But the taste was a bit of a letdown 😭 The sea bass was very salty, topped with equally salty chili pickles and a sour, salty green sauce. After a few bites, it was overwhelmingly salty and even bitter. Not recommended. 🥢 🎉 Scallops with Green Curry Sauce ✅ Recommended These are delicious! The scallops are naturally sweet, with a perfectly seared exterior and a tender, slightly runny center. Paired with a slightly tangy green curry sauce, it’s rich but not greasy.
