Since its opening, this restaurant has been a signature part of Bellagio, originally named Aqua and later renamed twice, now known as MICHAEL MINA Restaurant. Even during the closure of the Las Vegas Strip, eight guests once sat down for an unforgettable dinner here. Today, under the guidance of Chef Raj Dixit, it continues to be a truly memorable dining experience.🍸 The restaurant has always been a special place. On a quiet midsummer evening, five guests gathered at a familiar table just after 6 PM. Once again, with Carte Blanche, the menu was entrusted entirely to the kitchen, which curated a lavish and generous tasting experience.✨ Designed as an eight-course journey, every guest enjoyed white-glove service. Following a champagne toast, the evening began with Michael Mina’s timeless Caviar Parfait—a delicate assembly featuring everything from black eggs to crispy potato pearls, each bite punctuated with a palate-cleansing sip of Belvedere Vodka. Next came Mina’s signature house-made lavash—the first of two bread baskets, served with three exquisite dips—followed by Peruvian-inspired Hamachi, a perfect foie gras with seasonal accompaniments and warm brioche.🍸 The courses continued with tender gnocchi presented under a glass cloche, followed by generous shavings of Australian truffle, more aromatic than most, paired beautifully with a semi-sweet Riesling. The playful "Fish & Chips" made with black cod was a highlight, preceding a perfectly crisp duck skin.✨ No expense was spared with the triple-seared A5 Kagoshima Wagyu, complemented by a classic Bordeaux, or the Prime Filet Rossini.
