While waiting for our food tour to begin, we decided to stop for drinks at The Finch—an elegant restaurant located inside the stunning Union Station building, featuring a dedicated craft cocktail bar! Though I didn’t catch the bartender’s name, I won’t forget it was his final week working at The Finch due to financial reasons. What a shame—he was truly a master of his craft! 🥃🎨 He surprised us with delicious off-menu creations that were both imaginative and perfectly balanced. You could feel his passion and knowledge in every sip. I sincerely hope the other bartenders can match his level of expertise and creativity, because The Finch has truly lost a talented mixologist.
