Las Vegas Restaurant | Carbone | The Hard-to-Book Spot 🔥
Went to Carbone in Vegas with a friend who used to live in New York — the original NYC location is famously impossible to book (they never got in all their years there!). Luckily, the Vegas branch is easier to reserve. Before the meal, they served cheese, bread, prosciutto, and pickles. The cheese was aged 18 months — aromatic and rich (I’m not a cheese person, but everyone else loved it). The bread was crispy outside, soft inside, with subtle seasoning — I would’ve eaten more if we hadn’t ordered so much! 🍆 Eggplant & Zucchini Scapece — A refreshing, tangy starter — good for sharing with a group. 🐙 Octopus Pizzaiolo — The most tender grilled octopus I’ve had! Came with tasty mushrooms and pan-fried potatoes. 🦑 Calamari Marco — A dish my boyfriend and I still dream about! If you like fried calamari, you must order this. Light, crispy batter over tender, fresh squid — absolutely flawless. 🥩 Porterhouse Steak — Pre-ordered with the reservation. Pricey ($270+) but huge portion. Cooked perfectly, served with a tangy sauce — so satisfying. 🍝 Spicy Rigatoni Vodka — Their signature. Simple but unforgettable — rich, slightly spicy tomato sauce coating every piece of al dente pasta. Tied with the calamari as my favorite 😍. 🍝 Linguini Vongole — The other three loved this more than I did. Perfectly cooked pasta with tender clams and crispy fried garlic — fresh and flavorful. 🍰 Dessert — Carrot cake (not too sweet, quite good). They also gave complimentary petits fours (sweetness warning!). Overall, we left very full and happy. We ordered almost everything we wanted, so maybe no need for a second visit. Per person after tax & tip: ~$150 (would’ve been more affordable without the steak).
