It’s ultra-thin and crispy, topped with tarame, a Greek 🇬🇷 and Turkish 🇹🇷 caviar cream sauce 🧀, and sprinkled with green and yellow lemon zest 🍋. (The chickpeas at the bottom are not edible—trust me on this one). 🔸 Thinly sliced raw scallops 🦆. The scallops are barely marinated but have no raw fishy taste. They’re fresh and tender, topped with crunchy pomegranate seeds and a salty yuzu jelly 🍋, with a hint of yuzu fragrance. There’s a layer of chive cream 🌱 at the bottom, adding extra flavor. 🔸 Snails 🐌. There are two or three snails at the bottom of the bowl, covered with shiitake mushroom shreds 🍄, and the whole thing is wrapped in a parsley mousse 🌿. The mousse is made with whipped cream, giving it a dense and milky texture 🫧 with a strong parsley flavor. It’s best to serve it quickly as it can easily deflate. It’s served with a baguette 🥖, and the crispy fried bread crumbs on top add a nice texture. If you’ve never had snails, don’t worry—they don’t have much flavor on their own, and the meat is chewy.
