We started with: 🦪 Kumamoto Oyster – jelly-like, fresh, topped with roe and ponzu. 🍞 Foie Gras Uni Toast – rich but not oily, on crispy toast. 🍮 Crab Chawanmushi – silky egg custard with sweet crab, topped with shiso flowers. The sushi lineup was a dream—each piece introduced with an iPad visual of the fish/bivalve.
