Montreal | Totally Captivated by Mastard!

My first experience with a blind tasting menu in Montreal was incredibly exciting! Each dish was full of anticipation and surprises—definitely a day well orchestrated by the chefs. 🎉👨‍🍳 🥬 First Course: Rutabaga | Kale | Ham This was my first time trying rutabaga. It was a bit tough for my taste, but the broth was rich and creamy. The roasted kale and the bread, which you could use to soak up the broth, made the dish very satisfying. 🥄🍲 🦪 Second Course: Mussels | Leek | Maitake Mushrooms I really loved this dish! The foam on top was dense and flavorful, not just airy. Underneath, there were mussels, sweet leek (similar to scallions), and maitake mushrooms. Everything came together harmoniously. 🦪🍄 🐟 Third Course: Walleye | Endive | Lentils This was my first time trying walleye, a freshwater fish that's apparently quite challenging to catch. It tasted fantastic! The fish was firm and paired perfectly with the sauces. 🐟🍽️ 🐓 Fourth Course: Guinea Fowl | Cabbage | Herbs By this point, we were pretty full. The guinea fowl was new to me and had a chewier texture than regular chicken. The skin was crispy, but the green sauce on the cabbage was quite intense and not to my taste. 🍗🥬 🍐 Fifth Course (Dessert): Pear | Mint | Bun This dessert truly amazed me! The pear sorbet was delicious—I even asked if I could buy some to take home, but sadly, I couldn’t. The bun was Kouign Amann, crispy on the outside and soft on the inside, paired with caramelized nut cream. Not overly sweet, just perfect. 🍐🍰 Some Details I Loved: 🍽️ The cutlery was warmed and changed with each course. 🧑‍🍳 Each dish was served by a different kitchen staff member, so you get to meet almost everyone in the kitchen. 🧾 After the meal, you receive a menu of the day with the date. 🕒 The pace of the courses was determined by how fast the guests ate, with no long gaps between dishes.
