The beef is super tender, and the pickled mustard greens add such a nice touch—it’s so authentic! The noodles have a great chew, though the soup is a little oily. My favorite part is the preserved radish ✨ It’s salty, fragrant, and so quintessentially Taiwanese—total rice thief! I’ve never had such good preserved radish in the US!
