Hirohisa is a Michelin one-star restaurant located in Soho. Calling it kaiseki cuisine is actually not quite accurate. The restaurant actually specializes in Kappo. 🌸 Chef Hirohisa is an extremely humble person. He never thought he would receive a Michelin star. His reason for choosing Kappo over traditional kaiseki cuisine is that he wants to showcase a greater variety of cooking methods and dishes(basically more meat). The menu changes every month. 🎢 The moment you push open the door of the restaurant, it feels like you've jumped from a noisy neighborhood to a Zen space. What left a deep impression on me was that one wall was filled with all kinds of different cups. Like many kaiseki restaurants, if you pair sake, each type of sake will be served with a different cup taken from the cabinet. 🍃 This time we ordered Omakase. What left a deep impression was that the chef's Dashi was very well done. It's also worth mentioning that one of the dishes was served on a plate with a 140-year history. 🌊 The overall dining experience was that each dish was relatively simple and low-key, highlighting the characteristics of the ingredients themselves and the chef's intentions.
