πIβve always been a huge fan of kaiseki, and Hakubai truly exceeded my expectations with their summer menu! The first course, a combination of uni and corn mousse, was simply stunning. The sea urchin was incredibly fresh, and the portion was generous. The mousse was incredibly delicate and smooth, creating a perfect balance of flavors and textures. π£ π The following courses, including the grilled items, simmered dishes, and main course, were all very well-executed. Each dish showcased the chefβs attention to detail and the high quality of the ingredients. πThe second-to-last dessert, shiso sorbet, was a perfect palate cleanser, placed right before the beef course. It was incredibly refreshing and appetizing, making it the perfect transition from the savory to the sweet. π The only downside was that the strawberry cake is seasonal and usually not included in the tasting menuβyou have to order it separately. π π The ambiance of Hakubai is also worth mentioning. The restaurant is beautifully decorated, creating a serene and elegant atmosphere that perfectly complements the dining experience.
