I’d heard about this bakery in Brooklyn that always has a line. On a weekday morning, I braved the early hour and arrived shortly after their 8 a.m. opening. The two-story loft-style shop feels quintessentially European. 🍃 Already, a young man sat in the corner, half-heartedly reading a book. Locals trickled in one by one to buy their bread, and the kids couldn’t wait to dig in. Initially a small home bakery run by just two people, it was founded by Gautier, a young French engineer who turned his baking recipes into a science. Each croissant is still hand-rolled. 🎢 I ordered a tea and went straight for the pistachio rose croissant, which is one of the priciest at eight cuts per piece. Its flat body has crispy edges. One bite releases a rich buttery flavor mingled with the aroma of pistachios and roses.
