Neck Meat (Kama) ๐ŸŽฏ The fattest dish of the night! The meat was incredibly tender, literally melting in your mouth ๐Ÿ–. It was so rich and flavorful that it felt like a punishment for just two people to finish the whole plate ๐Ÿ˜‚. Usually, kama is grilled as kamayaki, but the fish was so fresh that night, the chef decided to serve it as sashimi. What a treat! ๐Ÿฃ Eyeball ๐Ÿง  Technically, we ate the eye socket part. Since it was well-prepared, a lot of the fat had melted into the sauce, so it wasn't overly greasy ๐Ÿฅฉ. The taste was nothing special, but it was an interesting experience! Cheek Meat (Hohoniku) ๐Ÿ˜œ Compared to the fatty kama, this was on the other end of the spectrum. It had less fat, more like lean meat, and lots of chewy sinew, giving it a great texture ๐Ÿ–. After having the super-rich kama, everything else felt refreshingly light! Top of the Head Meat (Noten) ๐Ÿคฏ The noten was also quite fatty, but more like a medium belly than a big belly. It had a balanced texture, not as delicate as the kama but more refined than the chewy cheek meat.
