Neck Meat (Kama) ๐ฏ The fattest dish of the night! The meat was incredibly tender, literally melting in your mouth ๐. It was so rich and flavorful that it felt like a punishment for just two people to finish the whole plate ๐. Usually, kama is grilled as kamayaki, but the fish was so fresh that night, the chef decided to serve it as sashimi. What a treat! ๐ฃ Eyeball ๐ง Technically, we ate the eye socket part. Since it was well-prepared, a lot of the fat had melted into the sauce, so it wasn't overly greasy ๐ฅฉ. The taste was nothing special, but it was an interesting experience! Cheek Meat (Hohoniku) ๐ Compared to the fatty kama, this was on the other end of the spectrum. It had less fat, more like lean meat, and lots of chewy sinew, giving it a great texture ๐. After having the super-rich kama, everything else felt refreshingly light! Top of the Head Meat (Noten) ๐คฏ The noten was also quite fatty, but more like a medium belly than a big belly. It had a balanced texture, not as delicate as the kama but more refined than the chewy cheek meat. It's probably the most crowd-pleasing part of the fish! ๐ฃ #NewYork #Wokuni #SashimiAdventures ๐
