New York | Wokuni Tuna Dissection and Auction ๐๐
Every third Tuesday of the month, Wokuni hosts a live tuna dissection and auction, where rare cuts are sold on the spot. The boxed akami (tuna belly), chutoro (medium fatty), and otoro (fatty tuna) are also discounted. My friend and I bid on four different parts and ended up eating so much tuna that we felt like we could never eat it again! ๐ฃ Tuna The tuna auctioned that night came from the Toyosu Market, weighing a whopping 250 pounds and valued at $50,000. The auction bell used by the owner is from Tsukiji, a nod to tradition. ๐ฏ Rare Cuts Display There were seven rare cuts auctioned that night: one piece of ago (chin), three pieces of nakaochi (spine meat), two pieces of eyeballs, two pieces of hohoniku (cheek meat), two pieces of kama (neck), two pieces of noten (top of the head), and one piece of tail. ๐ Akami Sushi Every guest attending the dissection event is treated to a piece of akami sushi. Itโs a delicious start to the evening! ๐ฃ Kama (Neck) The fattiest cut of the night, the kama was incredibly tender and literally melted in our mouths. It was so rich that just one plate was enough for two people. Normally, kama is grilled (kamayaki), but because the fish was of such high quality, the chef chose to serve it as sashimi. ๐ #NewYork #TunaLovers #SushiAdventures ๐๐
