🥐 Cinnamon & Walnut Babka $5.25+tax Beautiful and delicious, the most admirable aspect of this babka is the perfect balance of proportions. The filling doesn't overwhelm the bread, and there's no excess syrup or grease to interfere with the taste. 🍃🌸 The bread itself is exceptional—light, soft, and so tender it's hard to pick up. The sweetness is just right for a babka; any more would be cloying, and any less would lack that delightful pleasure. 🍞 Vanilla Bean Concha $4.5+tax Huge, and the pastry is incredibly crispy, which surprised me when I broke it open. Traditional concha pastries have a shell-shaped pattern (hence the name), but this one is a complete circle, reminiscent of Malaysian paparotti. 🍃🌸 The crumb inside is very fine, but the texture is unexpectedly dry and not very soft. I've had other conchas that were also dry, so I wonder if this is part of the traditional Mexican recipe. 🥐 Breakfast Bureka $8+tax The texture isn't particularly flaky. I suspect the dough for bureka is different from French puff pastry, something I've noticed at other places too. 🍃🌸 The filling includes pickles, eggs, and sauce, which would be better if reheated. ☕️ Cardamom Latte $6+tax The drink is top-notch! The texture is smooth, and the balance of spice and sweetness is just right (especially after eating the babka, the latte feels so refreshing hhh). 🍃🌸 I rarely buy drinks at bakeries, but I've tried a few places recently (Thea/Librae/Elbow) and they've all been good. 📍 Thea 17 Greene Ave, Brooklyn #NewYorkBaking #NewYorkBakery 🌟
