New York Chicken Soup Ramen--Totto Ramen Hell's Kitchen

—————— 🫕Soup: The soup base truly reflects the restaurant's meticulous care. After a long period of simmering, the flavors of chicken bones and meat have been fully integrated into the soup, creating a rich and creamy base that is incredibly fresh and savory. The seasoning is just right, not too salty or too bland, and the raw onion碎 at the bottom adds a refreshing and sweet aftertaste. Compared to the typical pork bone broth, it's less greasy, allowing me to slurp up the soup and noodles until the bowl is empty. 🍜Noodles: The noodles are firm, chewy, smooth, and elastic. Compared to the Chicken Paitan, the noodles in the Mega Paitan are harder and thicker with a slight alkaline taste, which absorbs the soup very well. 🍥Ingredients: The char siu (barbecued pork) is lean, likely made from shoulder meat, and has a smoky, charred aroma. The Chicken Paitan does not come with a soft-boiled egg, which needs to be ordered separately. The most popular Mega Paitan has more meat, making it suitable for men (or women with a hearty appetite like me). I'm not sure if it's because I've become more of an eater or what, but I always feel that the portion sizes at their place have decreased compared to before. —————— 💛Totto Ramen 📍464 W 51st St, New York, NY 10019 #New York#Totto Ramen Hell's Kitchen#food diary#Chicken Soup Ramen
