I tried this super popular Vietnamese spot in the East Village—and honestly, I think it’s even better than Saigon Shack near NYU! Vietnamese food and summer are such a perfect match 🌞 1️⃣ Beef Marrow Pho 🌟🌟🌟🌟🌟 Their signature broth is so rich and fragrant—it even gave me Lanzhou hand-pulled noodle vibes! The rice noodles are perfectly chewy with that nice rice aroma, and the beef marrow? Total perfection. We ordered one bowl to split between two, then added an extra marrow—smart move, since it let us try more dishes! 2️⃣ Fried Pig Ears 🌟🌟🌟🌟🌟 Obsessed. The pig ears are fried until so crispy they crumble, and paired with fresh, crunchy green papaya shreds—it’s a match made in heaven. So addictive, we finished the plate in minutes! 3️⃣ Summer Rolls 🌟🌟🌟🌟🌟 These are amazing too! The thin rice paper wraps up veggies, crispy bits, fish cakes, and spam, and the dipping sauce is like a sweet bean sauce—tastes almost like a lighter, fresher version of jianbing 🍘 So refreshing for summer! 4️⃣ Vietnamese Coffee 🌟🌟🌟 The coffee flavor is strong, but it’s way too sweet. Is Vietnamese coffee supposed to be this sweet, or did it get adjusted for the US?
