1️⃣ Tofu Pudding Fish 🐟 There's no better phrase than "numbingly spicy, fresh, and fragrant" for this dish! It's that particularly authentic Sichuan red oil flavor, with fish and tofu pudding both being very tender. 2️⃣ Sichuan Peppercorn Braised Intestines 🥘 At first, when it was served with a lot of sauce, we thought the sauce hadn't been properly reduced. But the intestines were not only tender but also very flavorful, and the broth was so fragrant that I took it all home to use in another dish. It's also incredibly delicious when used to flavor noodles!! If you buy a can of chickpeas from Whole Foods and pour it over the top, it becomes a bowl of aromatic and dizzyingly delicious intestine noodles!! 3️⃣ Chive Flower Squid 🦑 We ordered two seasonal dishes, and this was one of them. The squid is incredibly crispy and tender, and the chive flowers are refreshingly fresh. It's full of savory flavor, the kind that's perfect for pairing with rice. 4️⃣ July Beef Ribs 🍖 The other seasonal dish, order this if you love beef! The portion size was shockingly large! The rib meat is incredibly tender, with a slightly charred flavor. It's evenly marbled with fat, and the fatty parts are especially, especially fragrant.
