NYC | Kajitsu 🥢 Seasonal Vegan Omakase 🍴

📍 125 E 39th St 4th floor, New York, NY 10016 A beautifully crafted, entirely plant-based Japanese dining experience, now permanently closed 💔. I’m sharing this from my drafts—a meal I enjoyed with my 🐸 during a birthday celebration last year. Kajitsu was special. It wasn’t just dinner; it was a journey through the seasons. Each course was an artful presentation of roots, greens, grains, and foraged finds. I still dream about the bamboo shoot rice—simple, fragrant, and deeply satisfying 🌱🍚. The precision was breathtaking. From the delicate katsubushi made from shiitake mushrooms to the seasonal tempura and serene tea ceremonies, every detail felt intentional. But here’s the honest take: with over a dozen subtle, vegetable-forward courses, the experience stretched close to three hours. By the end, I wasn’t sure if I was full or just spiritually fatigued 😅. It was less a meal and more a meditation—one that required patience and presence. While Kajitsu’s doors are shut, its memory reminds me of how plant-based dining can be elevated to an art form. I hope spaces like this find a way to return someday. Until then, this post is my little tribute to what was. #KajitsuNYC #VeganFineDining #PlantBasedOmakase #SeasonalCuisine #JapaneseVegetarian #NYCFoodMemory #ClosedButNotForgotten #VeganFoodie #NYCDining #MindfulEating
