Paris | Seb'on: Hidden Gem Near Sacré-Cœur
Today, I had what I think is the best meal I’ve had in France so far, at a small bistro in Montmartre. I booked a table a week in advance, while still in the US. The restaurant is run by just the chef, Sebastian, and the owner. They only take 10 small tables for lunch, but today, a couple of Americans walked in just as lunch was ending, and the owner still let them in. The menu is available in both French and English. 🌟 Appetizers: - Black cod tartare with green apple, avocado, cucumber, coconut emulsion, Thai basil, and lime - Seviche shrimp with tiger’s milk, coriander, and cauliflower avocado sauce with sesame oil Those sauces on both appetizers were just out of this world! I ended up cleaning my plate with bread. 🥪 Main Courses: - French Aveyron pork, homemade Italian gnocchi, celeriac, and mushrooms with nutty Parmesan garlic sauce and nut oil meat jus. The meat was so tender, but the portions were quite large—I felt a bit full by the end! - Black rice risotto with marinated raw tuna, coral tarama scallops, and shrimp sauce. It was my first time trying black rice risotto, and the combination of flavors was simply stunning. 🍙 Desserts: - Thyme caramel pudding, Tatin-style apple tart with salted caramel and homemade mascarpone sorbet. I never expected such layers of flavor in a dessert! - Milk chocolate mousse with Earl Grey tea, honey lemon gel, and tea ice cream. 🍫 After such a satisfying meal, I can say that every day in France should be filled with different French cuisines.
