The Chef is American, and his mastery over the fermented dough is nothing short of “madness”: each pizza dough is left to proof for over 36 hours. The result is a crust that’s thin and crispy. 🌟The menu offers 5 flavor choices, with an additional chef’s special of the day. The combinations are creative and unlike anything I’ve tasted before. I had my first potato pizza, with potatoes thin enough to be transparent, paired with a crispy crust, and a touch of preserved lemon juice. The flavors were novel yet harmonious, a pure joy of carbs on carbs. 🌟The restaurant is so popular that reservations are typically available only a month in advance.
