A Three-Hour Meal of Serene Beauty L’Ambroisie, translated as “The Pantheon of Gastronomy,” has maintained its illustrious status since being awarded three stars in 1988, standing the test of time for over four decades. This time, my husband and I stayed in the Marais district of Paris, just a two-minute walk from L’Ambroisie. The restaurant’s classical and solemn murals, luxurious crystal chandeliers, meticulously arranged tables, and the rigorous servers all exude an aura of elegance. Each dish is a testament to the respect for traditional French culinary art and ingredients, offering the same flavors as decades ago. 🥚 Caviar-Enhanced Onsen Egg The onsen egg with cucumber sauce and caviar combines the smooth texture of the egg with the salty freshness of caviar, while the cucumber adds a refreshing layer to the palate. 🦐 Langoustine Layered with Curry Sauce The langoustine is tender and sweet, paired with a unique combination of curry sauce, spinach, and white sesame crackers, making it the most recommended dish. 🐟 Sea Bass with Caviar The flower-like sea bass is tender, and the caviar is generously portioned. The artichoke at the bottom is particularly acidic, which I found a bit acquired in taste. 🐦 Confit Pigeon with Vegetables The three-quarters done pigeon is masterfully confited, tender and juicy with a bit of blood but no fishiness. The crispy skin pairs beautifully with sweet figs and delicate onion sauce, while the vegetables balance the dish’s flavors. 🍫 Chocolate Tart As most diners say, it’s like digging into a cloud with a spoon.
