š§It's been a long time since I felt there was any fine dining worth mentioning, but this place is really good. ā£ļøIt's August now, and the summer menu is very gentle and refreshing, with every detail meticulously crafted. Each dish feels like it's been thoughtfully prepared. š“The appetizers are very appetizing, even the bowl of grass is delicious (grass seasoned with foie gras sauce). The sardines donāt have the usual fishy smell of silver-skin fish, which suits most people's taste, although it's a slight disappointment for me because I particularly like the fishy taste of sardines. šThe main dishes are perfectly cooked. Both the fish and guinea fowl are crispy on the outside and tender on the inside, with a good balance of oiliness and juiciness. Genius! The grilled fish is served with roasted black beans paired with salmon roe underneath, which is a creative idea. The guinea fowl is wrapped entirely in dough and baked in a stone oven, with a dedicated chef responsible for this part. It felt like roasting a beggar's chicken haha, very interesting. I didnāt have high expectations for the roast chicken, but this dish was perfectly cooked, a pleasant surprise. š„°The dessert, peach meat ice cream, is sweet and sour and not at all greasy, I love it.
