Pittsburgh Fujiya Ramen: A Taste of Japanese Ambience and Flavor
Stepping through the door, you're immediately enveloped in a rich Japanese atmosphere. The restaurant also features a mini bar, and it turns out my friend was right, I loved everything I ordered! 1️⃣ Tonkotau Ramen: A classic pork bone ramen with smooth and elastic noodles, a rich broth, and succulent pork belly that's fatty yet not greasy, soaked in the broth. The soft-boiled egg, leeks, and green onions are truly a favorite. 2️⃣ Yakitori: I ordered three types: Pork belly that's crispy on the outside and full of rich oil flavor; Bacon with egg and chicken skewers that are juicy and flavorful, with a smoky aroma that makes them a must-try. 3️⃣ Takoyaki: I really think this place's takoyaki stands out! The squid inside is large, tender, and chewy, and the sweet sauce is just to die for. 4️⃣ Dessert: I have to say, the desserts here are exceptional! I ordered two: Taiyaki with Ice Cream - the matcha here is not overly sweet, with a sweet creaminess complemented by the subtle bitterness of the matcha, paired with warm taiyaki; Fruit Sorbet in Shell - the outside is frozen mango, and inside is mango sorbet, which, unlike typical American ice cream, has no milky taste and is reminiscent of the mango ice cream from childhood. Overall, it's really great. You might have to wait in line during peak hours, but the turnover is quite fast, and the flavors are better than those at a few other sushi places in Shadyside.
