Regret-Proof Edinburgh Dining 🕊️ Tender Quail and Venison
The menu is placed at the end, offering two choices: an à la carte menu and a tasting menu, priced at 69/99 pounds respectively. The former has fewer dishes but larger portions. Overall, the experience was pleasant, with a reasonable wait time between courses that didn’t leave us anxious, and the tasting menu portions were just right. 🦌 My favorites were the sweatbread, potato, deer, and Blacketyside. Starters 🥒 Cucumber: Cucumber sorbet! Refreshingly appetizing, the Mexican chili and cucumber pair well with a slight spiciness. A hint of lemon flavor, along with the unique taste of sesame leaves. 🐮 Veal sweetbread: Fried pancreas, a small piece but aromatic when served, well-handled with no gaminess, and the caviar was not too salty. 🦀 Crab: The crab meat and apple tart beside it was also refreshing, with a subtle sweetness of crab meat. 🍞 Sourdough: The butter accompanying it was homemade + crab roe, with no buttery aroma, and a noticeable sweetness. The sourdough was too acidic, just average. Main Courses 🐟 Mackerel: An expected fishiness, similar to sashimi, on the salty side. The accompanying grapefruit puree was too little, almost non-existent. The hazelnuts were fragrant but didn’t pair well with mackerel. 🥔 Potato oyster: Roasted potatoes topped with a large piece of fried potato + popping caviar. The oyster was pureed with vegetables to make a creamy soup, a delicate oyster flavor with the soft potato, delicious. Sea bass 🐟: Finally, some meat, wild sea bass with olives and tomatoes 🍅. The olives were too overpowering, almost off-putting. The fish was tender to the right degree, the skin could be crispier. The sauce was a rich chicken broth. 🐦 Quail: Quail breast with oatmeal, several times tenderer than chicken breast, with a distinctive gamey/bird flavor within the acceptable range of freshness. 🦌 Deer: The winner in my eyes! Incredibly tender venison with ambered walnuts + black truffle bits + celery puree. The venison exceeded expectations in texture, and the pairing with salt flowers and truffles was divine. The Last Two Desserts 🫐 Bramble: Blackberry jelly + pistachio nougat, the jelly had a wonderful texture, smooth and tender, with a tartness. The nougat was too sweet. 🍓 Raspberry: Pastry + cheese + raspberry + pine nuts, individually ordinary, but together delicious 😋.
