San Francisco Michelin-Starred Spot | The Progress 🍽️✨

Having visited its sister restaurant State Bird Provisions — where not a single dish truly wowed me (especially that fish sauce pork belly — memorably not in a good way) — I approached The Progress with caution. But since it’s on the Chase Sapphire dining list, I decided to give it a try. 🥗 Starters: Caviar Potato Cloud: I’m just not a foam person 🫧 Tierra Vegetables Masa Dumplings: More like fried potato balls — why call them dumplings? Riverdog Farm Pig Head with Fennel: Thinly sliced pork head with lemon and fish sauce — bold and zesty, actually pretty appetizing. Josey Baker Rosemary Polenta Bread with Honey Herb Butter: The winner of the starters! Loved it so much I want to recreate it at home. 🍄 Main Course: Mushroom & Ricotta Sorpresine – Basically mushroom-cheese gnocchi. Honestly… my homemade mushroom pasta is better. 🐟 Signature Dish 1: Trout ⭐️⭐️⭐️⭐️⭐️ This dish alone justifies their Michelin star! Crispy black rice coating, tender fresh fish. If I had to nitpick — the ginger-lemon sauce was intense but still balanced. 🦆 Signature Dish 2: Duck ⭐️⭐️⭐️⭐️✨ A permanent menu item.
