The founders’ bread book is treated like sacred text in baking circles, and their country loaf recipe was once featured in the New York Times. I visited their Manufactory location — a flagship spot set in a converted industrial space with large windows, deep blue tones, and an open view into the bread production area. 🏭✨ You can watch bakers shaping dough, using flour sourced directly from mills, and loading loaves into massive ovens. Racks are always stacked with freshly baked sourdough — the scale is breathtaking, and they likely supply local restaurants too. Most customers order open-faced sandwiches on their sourdush — the smoked salmon and avocado is a classic. But I wanted to taste the bread in its pure form, so I got a loaf with cultured butter and a smoked trout dip.😋 Breaking it apart by hand was a moment of truth — the crust was crisp but not tough, the interior soft, moist, and airy with just the right tang. Not overly sour — just deeply satisfying. Eating it plain was a joy 🧈, with butter it was heavenly, and with the smoky trout dip — savory, rich, and perfect with a glass of wine 🍷.
