Lobster Triangoli (8.8/10): Vodka cream sauce + black garlic + a hint of sweet and sour seasoning. The pasta is soft yet chewy, filled with lobster and chili oil. The sweet and sour flavors, combined with the chili oil, add layers of taste and prevent the dish from being overly rich. π¦ Stuffed Farfalle (8/10): The sauce feels similar to the previous one but with more pronounced sweet and sour notes and a firmer pasta texture. π The smoked crab filling is a bit salty, and the caviar adds a burst of texture. π¦ Stuffed Mussels (8.5/10): Mussels + sausage risotto + lemon aioli. Simple yet delicious. π Cheesy Frittelle (7.5/10): Fried pasta + orange honey + cheese crumbles + Ricotta filling. It tastes just like what youβd expect from these ingredients, but the fried pasta is on the softer side. π π Why did the overall score drop despite the individual dishes being good? The citrus and sweet and sour flavors were just too overwhelming. Part of it was my fault for ordering too many similar dishes, but San Sabino does seem to overuse citrus and sweet and sour flavors (even the olive oil on the bread had a citrus note), leading to individual dishes that shine but an overall sense of palate fatigue. Iβd suggest being flexible with your orders based on your personal taste rather than sticking strictly to the signature dishes. π π That said, the individual dishes are still worth a second visit.
