The chef combines new and old salt to marinate and wrap the chicken, allowing the salt to slowly permeate the meat before baking for 45 minutes. The resulting salt-baked chicken has a slightly salty skin, but the meat is incredibly tender, even the breast meat is juicy 💦. The waiter will bring it to your table, cut it open layer by layer in front of you, then take it to the kitchen to be disassembled and served again. This process is very enjoyable as well. Goose Fat Roasted Angus Beef Short Ribs 🥩 🌟🌟🌟🌟🌟 This has been the most astonishing dish I've had this month. The steak is slow-cooked for 48 hours and then roasted to maximize the tenderness of the meat. The sauce is enriched with oil from pan-fried goose liver, making it full of the flavors of goose liver and beef fat. I regret not taking the sauce home; it would be perfect with rice or noodles 💯💯. Black Truffle Baked Local Fish 🐟 🌟🌟🌟🌟💫 Steamed and then baked, the truffle flavor infuses into the meat, with plenty of mushrooms added to enhance the aroma of the fungi. After serving, the waiter will debone it for you (a favorite for those who are lazy). While truffles are great, I prefer the steamed local fish, which better highlights the freshness of the fish itself. Organic Mixed Mushroom Stone Pot Baked Rice 🍚 🌟🌟🌟🌟🌟 This is a feast for mushroom lovers. The stone pot sizzles as it's brought to your table, and the waiter will mix it for you. There are six types of mushrooms inside, with the rice grains having a subtle sweetness and a distinct buttery aroma. The parts close to the stone pot also have crispy crust. XO Sauce Stir-fried Japanese Hokkaido Wild Scallops 🦪 🌟🌟🌟🌟💫 The scallops are plump and delicious, the green beans and onions are crisp and sweet, and the seasoning is a pleasant surprise.
