Michelin 🌟🌟 Vespertine Nestled in the architecturally rich Hayden Tract, the entire building was designed by Eric Owen Moss, radiating a futuristic and sculptural vibe. The restaurant has no sign—upon arrival, you’re guided to a small outdoor garden to sit and unwind amidst mysterious music, creating a sense of escape, tranquility, and intrigue in the heart of the city. You’ll then head up to the third floor to see the open kitchen and watch Chef Jordan Kahn and his team in action. After that, you’ll slowly descend to begin the dining experience. 🌊 1 | Wild Scallop The chef said the inspiration was “like eating a battery.” The first bite was startlingly sour—scallop + passionfruit—but mixed with mousse and petals, it became surprisingly delicious. 🍾 Paired with: Suenen Champagne 🌿 2 | Summer Resembled a stone on grass—you flip it open to eat. Snap peas + kiwi + edible flowers—refreshing but slightly bitter from the florals. 🍷 Paired with: 2021 Reid Spiegel 🦐 3 | Deep Ocean Served in a container carved from a large ice block—sweet shrimp + chilled broth. Extremely fresh; we drank all the broth! 🍷 Paired with: 2022 Bougros Grand Cru 🖤 4 | Obsidian Mirror A mirror-like obsidian appearance—smoked mussel + plum. The shell-shaped tableware was fun, and the sweet-sour-smoky balance was perfect. 🍷 Paired with: 2014 Riesling Grossi Laüe 🐟 5 | Aged Kinmedai Dry-aged for 30 days, charcoal-grilled with rich aroma, paired with papaya sauce for great balance. My girlfriend’s favorite dish! 🍷 Paired with: 2023 Skerpioen 🕊 6 | Coturnix Quail + Sourdough Porridge Bread First time having quail in fine dining—one piece breast, one piece leg. The breast was great in bread; the leg was slightly sweet on its own. 🍷 Paired with: 2022 Les Champans 🥩 7 | Spring Lamb The lamb was tender and flavorful. 🍷 Paired with: 2016 Viña Real Then we moved downstairs: 8 | Red Earth Cheese course. 🍷 Paired with: 2019 Mt. Veeder Cabernet Sauvignon 9 | Caramelized Pancake Made with lamb fat and whiskey, served with tea. 10 | Icy Birch A refreshing dessert where you break through a layer of ice on top. 11 | Layers A black raspberry-flavored dessert.
