The World’s Only Three-Michelin-Starred Vegan Restaurant (1)🌟

🥗After many years, we returned to Eleven Madison Park, and it was a truly emotional experience. We first visited here in 2011, when we had just started traveling the world and dining at amazing restaurants. This place can be considered the birthplace of our fine dining journey. 🌇 Coming back today holds a special significance. In 2021, the chef made a bold decision to switch to a fully vegan menu, making it the world’s only three-Michelin-starred vegan restaurant. 🥗 We’ve been following plant-based cuisine for many years, so returning here is not only about reminiscing but also about embracing the new. 🌿 The restaurant’s Wi-Fi password is now “eatmoreplant.” We also learned about a brand-new ingredient called Tonburi. It’s the seed of a cypress tree from Akita Prefecture in Japan, harvested in summer. 🌟 After boiling and drying, it looks strikingly similar to caviar, earning it the nickname “field caviar.” When you taste it, it bursts slightly in your mouth.
