Shijimi Clam Ramen at Kohaku Tokyo Main Store ๐ The soup base is the soul of Kohaku's ramen. Made with clams from Lake Shinji, it is simmered for a long time to fully release the umami into the broth. ๐ข๐ The combination of clam juice and chicken broth adds depth to the soup. ๐ I tried both the salt and soy sauce flavors. The salt flavor highlights the freshness of the clams, while the soy sauce flavor has a stronger aroma from the soy sauce itself, which slightly masks the clam's natural taste. If you can only choose one, I recommend the salt flavor. ๐ข๐ The char siu comes with five slicesโthree shoulder cuts and two belly cuts, a mix of lean and fatty meat.
