The noodles were smooth, with a high water content, and had just the right amount of firmness. 🍃🌸 They were slightly thicker than regular Chinese noodles, giving a very smooth and slippery impression. 🍜🌟They had a nice chewiness and absorbed just enough of the broth to capture its flavor without needing a super thick soup. In fact, it almost felt like eating a mixed noodles dish. The extra slices of 🐖 chashu (pork belly) were traditionally cooked, wide and tender, melting in the mouth without any greasiness. 🍃🌸 The overall balance of the bowl was incredibly delicate. The acidity was much better controlled than at some chain shops, and after eating, there was no oily or fishy aftertaste that you often get with regular pork bone and seafood ramen. It felt like the shop had removed any greasiness. 🍜🌟 The staff were also super friendly, thanking customers for braving the heat to visit.
