👉 Oyster ⭐️⭐️⭐️⭐️: Oyster with lemon champagne foam. Since I'm not a big fan of champagne, I felt the lemon champagne was a bit unnecessary, haha. But the oyster itself was quite delicious—sweet and with thick, tender flesh. 👉 Shima Aji ⭐️⭐️⭐️⭐️⭐️: The Amberjack was absolutely divine! So many layers of flavor. You first get the crispy tart and fish, then the sweet and sour notes from the finger lime, and finally, the pepper kicks in, followed by a hint of lemon freshness. I think there was even a touch of pear. 👉 Foie Gras ⭐️⭐️⭐️⭐️: Foie gras tart—quite tasty! The grapes really helped balance out the richness. Super smooth and velvety. 👉 Mackerel ⭐️⭐️⭐️⭐️⭐️: This tart had everything—fish roe, seared mackerel, and green curry. Loved it! The subtle fishy taste was delightful, and the mackerel was so tender. 👉 Kinmedai ⭐️⭐️⭐️✨: Sea bream with plum vinegar and radish. It felt like I didn’t really taste much until I dipped it in the sauce on the plate, which added a nice tangy touch. 👉 Chawanmushi ⭐️⭐️⭐️⭐️⭐️: The chawanmushi was quite good! It had a nice fermented bean paste flavor, and the foam on top was pleasantly salty. The mushrooms were super tasty, and the whole dish was very savory, though a bit on the salty side.
