Toronto | Ultra-Niche Tasting Menu Hidden in a Fish Shop 🐟🍽️
I've been following this place on Instagram for a while. During the week, it operates as a seafood retail shop supplying fish to many excellent restaurants like Actinolite, Pearl Morissette, and Quetzal. They host pop-up events every week or two, usually on weekends, collaborating with different chefs. This means their menu is always changing. 🌟🍴 This Friday, my boyfriend and I tried their Spring Sakura Menu 🌸, featuring seasonal spring ingredients. The menu consisted of 8 dishes with a clear theme and great flavors. You can really feel the dedication and creativity of the chefs, Matt and Jon. However, the meal felt a bit light—three of the dishes were vegan, and I think I could’ve used 2-3 more meat or seafood dishes to feel full. 😋🍽️ Sushi Wrapped in Radish Slices: Very refreshing. 🍣🍃 The radish was more tender and flavorful than the daikon in oden. The white miso on top, made from the shop's fish bones, was simply divine. 🍲✨ Tofu Skin Rolls with Asparagus: The soy milk sauce was a standout—fragrant and rich. They really know their way around soy products. 🌱👌 Tofu Prepared Over Three Days: Chef Matt, who’s been making tofu for nearly 10 years, explained the process of making tofu from soybeans over three days. He’s also worked at Actinolite. 🥢🕰️ Steamed Fish with Sake Cream Sauce and Salmon Roe: The fish was incredibly tender. The warm cream sauce with salmon roe poured over the steamed fish was delicious. 🐟🍣 Miso Grilled Fish: The skin was super crispy and came with mushrooms and sweet vinegar radish flowers. 🍄🌸 Rice with Tiny Fish: The rice portion was a bit much, but the tiny salmon fish were salty and tasty, accompanied by fava beans. 🍚🐟 Cherry Blossom Sticky Rice Dumplings: A perfect ending to the menu, with pink color from rhubarb stalks. The sweet and tangy flavor reminded me of fruit leather from my childhood.
